Chrissy Teigen's Granola


My kids ate it. I made her recipe for Peanut Butter Covered Pretzels and Granola with leftover granola. And I effing hate whole stories to go along with recipes so why I'm still typing this crap, I don't know. All you need to know is that the kids ate it all. 

Buy her book, Cravings: Hungry For More and then you'll be able to experience the utter delight of eating homemade granola warm from the oven.

Meal Planning 6/21 - 6/25

This week is ridiculously busy. I've changed my mind 12,835 times.

Monday: Leftover Adobo Chicken with Sweet Potato Hash and Steamed Broccoli

Tuesday: Dino Nuggets plus mac and cheese

Wednesday: EARLY DINNER: Grilled Cheese, Steamed Broccoli, Raw cucumbers with hummus

Thursday: Steak and tomato salad with Feta

Friday: Grilled Pork Chops with Grilled sweet potatos and grilled any veggie leftover in the fridge

Saturday: MN United Game

Review: Bobby Flay's Salsa Verde Soup


I requested Bobby Flay's Fit cookbook from the library. I'm not quite sure what I was expecting because it's not like Bobby Flay is in the weightloss or fitness genre. I suppose I was expecting more...Bobby Flay???

I thought that the Salsa Verde Chicken soup recipe would be a great easy recipe to try, expecially during Spring Break when I have some extra time to cook. I mean, the children are still wild animal beasts but whatevs...

In any case the soup was straight up chicken, stock, plus salsa verde. There were no other veggies in the soup, no pasta, no rice, no legumes, no beans. Just straight up chicken.

I thought it was bland too. The two jalepenos in the Salsa Verde did not do the soup justice, it was VERY kid-friendly except for the whole no veggie part. I did have to dig the chicken out for Chewie because he couldn't scoop it out with his spoon which meant that he ate his soup on a plate and I needed to serve cut veggies with hummus for a side dish to make up for the lack of veggies in the soup.

I did make another recipe - Quinoa Con Pollo which was EXCELLENT. I have the book for another two weeks, so I'm definitely going to try a few more recipes from Bobby Flay Fit.

What's in the CSA Box This Week?

I'm so freakin' excited!!!
We're sharing a CSA box with our neighbors this year and I cannot wait! This pick-up location is super close to our houses as well so it makes it so much easier. 

Well, well, you might think that living in Minneapolis there's not much local food but alas! There is! There are usually farmer's markets in all the suburbs (I've bought eggs, meat, cheese, pickles, veggies, etc...) AND there's lots and lots of local farms.

My AWESOME neighbor did some research and decided upon Driftless Organics which is based just across the border in Wisconsin. So not only are they organic BUT they send us emails with photos of all of their hardwork! Awesome, no?

So this summer my goal is to blog about what I make with the food and to let you know if it's worth the price (we each paid $130 for 10 boxes of food). I can't wait to try new veggies and new recipes!

What To Cook This Week?

Meh, I have no idea.

What sounds good? What do I have in my fridge? Leftovers? I have to keep in mind that I'm picking up turkey necks, bison liver and something else for the dog tomorrow that needs to go in the freezer...

I guess I'm going grocery shopping this afternoon.

Maple Glazed Pork Chops?
Shrimp with Gnocchi and some sort of veggie?
I think I might have pork ribs hidden from the dog in the basement fridge...
Salad with grilled chicken with a balsamic glaze?
Salad with the champagne dressing (oops, infusion) from the local olive oil shop?

Please, someone, knock me over the head with a 2x4 to knock some sense into me so I can actually meal plan for once and I don't make my life harder on myself.

So what is everyone else having for dinner this week? Anything that I can try?

Menu For This Week

I don't ever want to see McDonald's, Burger King or possibly any steakhouse for the next few months.

And I feel like I gained 10 pounds after our adventures in Colorado. And no, I don't ski (well, I haven't for like 10 years), and no, I don't snowboard (I have twice, but I do have my own board, so maybe I'll start again).

So, here's what we'll be eating this week:

Chicken
Salad
Vegetables
Maybe some other meat

But it will be baked or grilled.

All HEALTHY. Well, that's what I'm shooting for this week!

Tuesday Dinner: Shrimp Scampi with Linguine

Wednesday Dinner: Most likely pizza

Thursday Or Friday Dinner: Broccoli & Cheese Soup with Homemade Beer Bread

Thursday Or Friday Dinner: Either leftovers or Grilled Cheese Sandwiches & Tomato Soup
