Simple Frittata Egg Bake Something or Other

I love eggs and I love anything with eggs. Really, I do. So this is THE PERFECT breakfast. And cheese.
And potatoes.
And bacon. Who doesn't love bacon besides vegetarians?
MONSTER loves the kitchen.
Cut bacon into bits and fry up.
Make sure it's nice and crispy.
Take out the bacon and then toss in the chopped SMALL onion.
For healthy people, drain the fat off on a paper towel.
Mm... bright yellow egg yolks. Next time I'd use 4 eggs instead of three.
Mix in the hot sauce and soft cheese (for creaminess)...
Toss the potatoes into the pan and brown them up a bit so they're crispy.
Then add in the egg mixture, bacon bits and top with cheese.
And then put in the oven at 425 and bake for 12 - 15 minutes.
Mmm... all my favorites all in one pan.
Bake until the eggs have set and the cheese is all melty.

    Bimmer Man. But I do have to say, we have opposite interests, so in terms of college degrees, yes, he is smarter but in terms of how to clean the tub or bake a cake or blog, it's totally me all the way.

    Hmm... Scotties? Eh, I'm not really sure, I cook a lot.

    Do NOT talk to me in the morning. Do NOT talk to me when I'm PMS'ing and washing the dishes. My dirty mouth and PMS do not work well together.

Herbed Butter Chicken

MONSTER lurves chicken.
Chicken skin still kinda creeps me out... Doesn't it just look weird?
The usual suspects.
MONSTER lurves chicken. Did I already mention that? He moves pretty quickly around food though...
Butter.
Jameson and gingerale.
Garlic.
Why are these things so hard to open?
Use about a teaspoon of each herb/spice.
And just dump it in the butter.
You need about 1 tablspoon of butter for each thigh/breast that you're making.
Add salt & pepper and mix.
Just smash it all around. I didn't use a fork, the butter get stuck between the tongs and well, it doesn't get to where it's supposed to be. On the chicken.
Loosen the skin from the meat with a spoon, but don't get it all the way off.
With a small spoon, put one tablespoon of the butter mixture into the chicken. You can also stuff with herbed goat cheese, but this tastes better, it gets nice and crispy.
See the butter?
Mmm... they don't look very good yet, but trust me, they will!
Sprinkle with salt and pepper, drizzle a little bit of olive oil over the chicken.
Heat a pan over medium high heat and put the chicken in skin side down.
Flip after the skin has browned and is nice and crispy. Finish off in the oven for 12 - 15 minutes.
The smell is overwhelmingly fabulous.
Mmm... it's so food and crispy and yummy.
Ok, so maybe it's not that good for you, but it tastes so great.
Herbed Butter Chicken
4 chicken thighs
4 - 5 tbsp unsalted butter
1 tsp each basil, thyme, McCormick's seasoning
1 clove garlic, chopped
Olive oil
Salt and pepper
Mix the herbs and garlic with the butter.
Stuff the butter mix into the chicken.
Sear, skin side down for 5 - 7 minutes, flip and finish off in an oven that's been heated to 425 degrees.
Serve with wild rice.

Herbed Salmon With Couscous


Fish. Generally I love it. And I love it fresh. But remember, I'm in Indiana so I can't really get fresh fish, I mean what am I going to do? Dig my own lake?
Instead I got a bag of freshly frozen salmon. The easiest way to cook = baking.
Herbed Salmon
(This for only one serving)
Drizzle olive oil over the salmon, both sides
Sprinkle the following herbs on both sides of the salmon:
Thyme
Salt & pepper
Marjoram
A teensy bit of dried basil
Preheat oven to 425 degrees farenheit
Bake for 10 - 12 minutes or until salmon flakes.
I serve over couscous with peas, but wild rice or mashed potatoes or asparagus would be good too.

Happy Valentine's Day, Bimmer Man. Ok, so it's one day late. I'm a little disorganized, ok?

PW's Scrambled Eggs

The MONSTER likes cheese. This is what happens when I make eggs. With cheese. I break off small pieces of cheese for MONSTER and we do some "training" in the kitchen.
Don't blink MONSTER! Good stay...
Do you know what all natural eggs look like?
Beautiful eggs.
I want chickens some day so I don't have to buy eggs at the grocery store. I want to go to my chicken coup and get eggs.
But that means that I have to take care of them and MONSTER can't eat them. The chickens I mean. He likes to chase squirrels so he's probably chase chickens too.
Mmmm... They're so bright and gold.
Feta cheese just to switch it up a bit.
And Kraft American cheese. Singles.
Mix up your eggs with milk.
And pepper.
And contemplate what temp your pan should be at.
Low to medium-low. Gently scramble the eggs. Let the bottom set and pull one side to the other, hence gently scrambling your eggs.
Add both cheeses.
And put some sauce on it.
Then look at your glorious eggs. Yum.
And instead of devouring on the couch like normal, just stand there and eat them.
3 eggs
1 tablespoon evaporated milk (I used 2% milk)
Pinch of salt
1 to 2 tablespoons butter (I used PAM on my pan)
1 slice Extra Thick Velveeta Cheese

Heat small skillet over low to medium-low heat.
Mix eggs, evaporated milk, and salt together until thoroughly combined.
Add butter to skillet, swirl to coat.
Pour in eggs.
Tear cheese into pieces and add to the eggs
Stir eggs gently as they cook.
When cheese is totally melted, eggs are done.

Eat by themselves or serve over toast.
