One packet of yeast
1 cup of water
2 tablespoons olive oil (Ok, so I use more like 3)
1 tablespoon honey
And then to change it up: 1 tablespoon dried herbs of whatever you like
1 tsp salt
3 - 4 cups flour
Mix the water with the yeast, let proof for 2 minutes then add all other ingredients - the flour 1 cup at a time. Knead dough for 7 minutes. Put in oiled bowl for 30 minutes to rise.
Then PRESS out dough with fingers (NOT WITH ROLLING PIN) on a baking sheet that's been sprinkled with corn meal.
Top with all the toppings and bake for 12 - 17 minutes at 425 degrees.
Voila! The perfect pizza.
