Sorry, no picture today! I made pasta salad for book club and I swear, it's the EASIEST ever.
Seriously.
1 box of rotini pasta
1/2 to 3/4 cup of Italian dressing
1/4 cup Greek dressing (I ran out of Italian, oops)
1 box of cherry tomatoes, halved
2 or 3 roasted red peppers, chopped finely
Black olives (optional)
Feta cheese (I used half a package of Athenos plain feta, but you can use a flavored feta too)
Cook the pasta, then combine everything in a bowl and refrigerate. Serve with some extra feta on top. If you like pasta with more dressing, just add more Greek or Italian dressing.
See? I swear, so easy!
